the flour

Our blend of freshly milled flour, ground from organic wheat berries, provides deep flavors and nutrient density. In commercial flour production, the bran and germ are sifted out, significantly reducing the fiber, vitamins, minerals and phytonutrient content. We mill our flour on-demand for each batch to minimize the oxidation and degradation of vitamins and antioxidants.

It's often said that we eat with our eyes first. Our meticulously crafted reusable bread bags (coming soon) cradle our loaves in a beautiful and meaningful way. Minimizing single-use packaging and building up the habit of reasonable reuse is an integral part of our ethos.

the bakery

We are a San Francisco nanobakery (smaller than a microbakery) focusing on sourdough loaves made with freshly milled flour. Our robust starter, lovingly named Dear Leaven Hansen, does the heavy lifting in fermenting the milled grains, developing complex flavors, and enhancing digestibility.Dana, our CBO (chief baking officer), is a self-taught home baker who fell deep down the rabbit hole of sourdough and freshly milled flour. She also enjoys sewing and needlework and is excited to merge her interests at kneadle+bread.
